Our version layers whole Medjool dates with creamy peanut butter, a generous coat of melted dark chocolate (70%+ cacao), and a finish of flaky sea salt. Four real ingredients, no baking required, and it comes together in about 15 minutes.

INGREDIENTS
Date Base
- About 12–15 pitted Medjool dates (approximately 1 ½ cups, packed)
Layers
- About ½ cup natural peanut butter (creamy or crunchy — your call)
- About 100g dark chocolate (70%+ cacao), chopped or broken into pieces
Topping
- Flaky sea salt (like Maldon), for finishing
STEPS
- Prepare the date base. Line a small baking sheet or tray with parchment paper. Slice each pitted date open and press it flat, sticky side down. Arrange them tightly together to form a thin, rectangular layer. Place another sheet of parchment on top and use a rolling pin or the bottom of a glass to press the dates into a flat, unified base.
- Add the peanut butter. Spoon the peanut butter over the date base. If it’s too thick to spread, warm it in the microwave for about 20–30 seconds. Use the back of a spoon or a small spatula to spread it evenly across the entire surface.
- Melt the chocolate. Break or chop the dark chocolate into small pieces. Melt using a double boiler (a heatproof bowl set over a pot of simmering water) or in the microwave in 30-second intervals, stirring between each, until completely smooth.
- Pour and spread the chocolate. Pour the melted chocolate over the peanut butter layer. Use a spoon or spatula to spread it evenly across the entire surface. Work quickly before the chocolate starts to set.
- Finish and chill. Immediately sprinkle the top with flaky sea salt while the chocolate is still wet. Place the tray in the freezer for about 20–30 minutes, or in the refrigerator for about 45–60 minutes, until the chocolate is completely set and the bark feels firm to the touch.
- Break and serve. Once fully hardened, lift the bark out by the parchment paper. Break it into pieces by hand for a rustic look, or use a sharp knife to cut it into squares or bars. Store in an airtight container in the fridge or freezer.
