Hurma Bar with Dark Chocolate & Sesame

Inspired by traditional Middle Eastern date confections, this no-bake Hurma Bar combines the caramel-like sweetness of whole dates with crunchy walnuts, toasted sesame seeds, and a rich swirl of melted dark chocolate. Five real ingredients, no refined sugar, and zero baking required.

INGREDIENTS
Base Mixture
1 cup pitted Medjool dates (about 10–12 dates)
1 cup raw walnuts
Coating & Filling
¼ cup sesame seeds, lightly toasted
50g dark chocolate (70%+ cacao), melted — we used our Smooth Dark 72%
2 tbsp plain Greek yogurt
STEPS

Blend the base: Add the pitted dates and walnuts to a food processor. Pulse until the mixture forms a sticky, moldable dough. If it feels dry, add a splash of water.
- Shape the logs: Scoop out the dough and roll into two long logs (about 1 inch in diameter) on a clean surface.

Coat in sesame: Spread toasted sesame seeds on a plate. Roll each log in the seeds, pressing gently so they stick on all sides.

Create the channel: Using the handle of a wooden spoon or a thin dowel, press a groove down the center of each log lengthwise. This is where your filling goes.

Fill with chocolate: Drizzle the melted dark chocolate into the channel of each log.

Add the marble: Drizzle Greek yogurt over the chocolate. Use a toothpick to swirl them together for the marbled effect.
- Chill and slice: Refrigerate for 30 minutes until firm. Slice into 1-inch bars and serve.

We used our Smooth Dark 72%, which is made with just organic cacao and organic Medjool dates — 0g added sugar and 11g dietary fiber per 50g. But any quality dark chocolate with 70%+ cacao works. |

A source of protein and probiotics that may support gut health. In this recipe, it adds a creamy tang that contrasts with the rich chocolate — and creates that signature marbled look. |
WHY THIS RECIPE WORKS
Traditional Hurma bars use refined sugar or honey. This version keeps the sweetness entirely from whole dates — both in the base and in the chocolate. If you choose a dark chocolate that’s also date-sweetened (like ours), the entire bar stays free of refined sugar.
Dates act as the base and the sweetener, walnuts bring healthy fats and crunch, and sesame seeds add a nutty, toasted layer that ties the whole thing together. Real ingredients, nothing unnecessary.
