The Sweet Tooth That Started It All

My name is Yaniv Simpson, and this is the story of how The Conscious Bar came to be.

Let me take you back to the beginning—when a five-year-old version of me got banned from a candy store. Why? Because even then, I loved chocolate with a passion that defied limits. Fast forward a few years, and 12-year-old me was sitting in a dentist’s chair, staring down six cavities after yet another chocolate binge. Clearly, my sweet tooth wasn’t going anywhere.

Dreams Beyond Sweets

Around that same time, I fell in love with basketball. It became my obsession, my dream. I gave it everything I had—countless hours on the court, relentless training, and a fierce determination to make it as a pro. But after four surgeries and some harsh realities, it was time to let go.

There I was, an adult with an insatiable love for chocolate and a deep, true respect for my health. And then it hit me… if I wasn’t going to stop eating chocolate, maybe I could reinvent it.

What If Chocolate Could Be Better?

What if chocolate could taste just as incredible—better even—but also serve as something that’s actually good for me?

That’s when the gears started turning. First, I needed the best cacao in the world—something pure, rich, magical—cacao that embodies everything I’ve ever loved about the experience of chocolate. Then came the big question: what would I use to sweeten it? Being Middle Eastern, the answer was almost too obvious: Dates. Sweet, velvety, natural, and nutrient-packed, they were the perfect complement.

From the Kitchen to The Conscious Bar

With some help from a friend, armed with a countertop chocolate refiner I bought off Amazon for $250, I dove into my first batch. The result… let’s just say, not that great. But I saw the potential. So I kept pushing.

From there, the next move was obvious—I needed to find the manufacturer to get this recipe alive and kicking. After eight months of refining the recipe, I could finally say with confidence that we had created the absolute most delicious chocolate I’ve ever tasted. Finally, there it was—The Conscious Bar was born.

It started as a selfish endeavor: I wanted absolute free range to pig out on insanely delicious chocolate without the guilt. But the moment I took that first bite, I knew this was bigger than me. This was something I had to share with the world. Three and a half years later, with a team whose sole mission is to redefine the ultimate chocolate experience, I believe we’re doing exactly that.

Exploring The Possibilities

Our founder began doing R&D with a counter-top refiner in a NYC Apartment. Though the initial results weren't great, i could see the potential.

The Pursuit Of A Recipe

Finding A Manufacturer

After understanding the skills required to make incredible chocolate, our founder found a chocolatier and began creating our original recipe.

The Official Launch

The Conscious Bar Launches In Miami

After the original recipe & packaging were created, The Conscious Bar launched in Miami with our 4 original flavors: Smooth Dark Chocolate, Toasted Coconut Flakes, Roasted Hazelnut, & Almond Sea Salt

After testing our local market & figuring out how to ship chocolate sustainably and efficiently, we began getting chocolate into the hands of chocolate lovers across the US.

The Conscious Bar re-brands & launches version 2.0 into the world, entering the market with a fresh look that allows for customers to identify our mission in a heartbeat. Plus, we were able to bring our price down to $10.
