These no-bake date squares layer melted dark chocolate, whole Medjool dates, creamy peanut butter, and a crunchy mix of pumpkin seeds, pistachios, and pecans — sealed with more chocolate and a sprinkle of flaky sea salt. Five real ingredients, no refined sugar, and ready in under an hour.

INGREDIENTS:
Base & Seal
- Approximately 200g dark chocolate (70%+ cacao), melted — we used our Smooth Dark Chocolate
Layers
- 4 Medjool dates, pitted and opened flat
- About 2 tbsp natural peanut butter (unsweetened, ingredients: just peanuts + salt)
- A handful of pumpkin seeds
- A handful of pistachios
- A handful of pecans
Garnish
- Extra pistachios, for topping
- Flaky sea salt, a light sprinkle on top

STEPS
- Melt the chocolate: Gently melt your dark chocolate using a double boiler or short bursts in the microwave, stirring between each until smooth.
- Base layer: Spread a thin, even layer of melted chocolate onto a sheet of parchment paper, roughly the size of your dates laid out side by side. Reserve the rest for sealing.
- Add the dates: Press the opened, pitted Medjool dates flat onto the chocolate in a single layer so they cover the base.
- Peanut butter layer: Spread an even layer of peanut butter over the dates, edge to edge.
- Toppings: Sprinkle pumpkin seeds, pistachios, and pecans evenly across the peanut butter, pressing gently so they stick.
- Seal: Pour the remaining melted chocolate over the top, spreading gently to cover the toppings completely.
- Garnish: Finish with a few extra pistachios and a light sprinkle of flaky sea salt.
- Chill and slice: Refrigerate for about 30 minutes, or until fully hardened. Slice into squares and serve.

The higher the cacao percentage, the less sugar, and the more of those benefits come through. Look for a bar with a short ingredient list and no refined sugar. We used our Smooth Dark 72%, made with just organic cacao and organic Medjool dates. But any quality dark chocolate 70% or above will work. |

WHY THIS RECIPE WORKS
Most no-bake chocolate bars rely on powdered sugar, syrups, or condensed milk to hold everything together. This version skips all of that. The dates are both the sweetener and the chewy middle layer, and the chocolate does the structural work.
If you choose a dark chocolate that's also sweetened with whole dates (like ours), the entire recipe stays free of refined sugar from start to finish. Whole fruit, whole nuts, whole seeds, and real cacao. That's it.
