No-Bake Berry Chocolate Bars

These no-bake berry chocolate bars are what happens when you take the simplest pantry staples and let real food do the heavy lifting. A crispy rice cake base, a jammy chia berry filling, and a layer of melted dark chocolate on top… no refined sugar, no complicated steps, and no oven required. We made ours with our Smooth Dark 72%, made with just organic cacao and organic dates, but any quality dark chocolate with 70%+ cacao works just as well.

Ingredients:

Base

  • About 6–7 rice cakes
  • About 1 tbsp peanut butter
  • 1 mashed banana
  • About 130g (4.6 oz) dark chocolate, 70%+ cacao — we used our Smooth Dark 72%

Berry Layer

  • About 250g (8.8 oz / 2 cups) frozen mixed berries
  • About 2 tbsp chia seeds

Optional Topping

  • Shredded coconut

How to Make It

  1.  Make the base. Crush the rice cakes by hand in a large mixing bowl until they're broken into uneven pieces. Add the mashed banana and peanut butter, then mix until everything comes together into a sticky, moldable mixture.
  2. Press into a mold. Transfer the base mixture into a lined baking dish or silicone mold and press it down firmly into an even layer.
  3. Cook the berry layer. Add the frozen berries and chia seeds to a small saucepan over medium-low heat. Stir occasionally for about 10–15 minutes, or until the berries have broken down and the mixture has thickened into a jam-like consistency.
  4. Layer the berries. Pour the warm berry mixture evenly over the pressed rice cake base and smooth it out.
  5. Add the chocolate. Melt the dark chocolate and pour it over the berry layer. Spread evenly. Scatter a handful of shredded coconut on top if using.
  6. Freeze until set. Place the whole tray in the freezer for at least 1 hour, or until fully hardened. (You can also set it in the fridge — it will firm up more slowly, but it works.) Once set, slice into 6 large bars or 12 smaller pieces.

Rice Cakes

The base of this recipe. Plain rice cakes are light, gluten-free, and provide a neutral crunch that holds up well when pressed and frozen. Whole grain brown rice cakes supply small amounts of manganese, B vitamins, and selenium. Their neutral flavor makes them a great canvas for stronger ingredients like banana and peanut butter.

Banana

The natural binder and sweetener in this base, no added sugar needed. Bananas provide potassium (about 10% of your daily needs per medium banana), vitamin B6 for energy metabolism, and prebiotic fiber that feeds beneficial gut bacteria. 


Despite their sweetness, ripe bananas have a low glycemic index of around 51, meaning they cause a more gradual rise in blood sugar than processed sweeteners.

Peanut Butter

Adds richness, protein, and staying power to the base. Peanut butter is rich in monounsaturated fats, which may support heart health, and provides about 7g of protein per 2-tablespoon serving. Because it's a protein- and fat-rich food, it can help slow the absorption of carbohydrates, making this base more satisfying and balanced. A large review of eight studies found that regularly eating peanut butter was linked to a lower long-term risk of type 2 diabetes. 


Look for natural peanut butter with just peanuts and salt,  no added oils or sugars.

Frozen Mixed Berries

The star of the filling. Berries are among the richest food sources of anthocyanins (the plant pigments that give them their deep red, blue, and purple colors). Research published in PMC shows that anthocyanins have broad antioxidant and anti-inflammatory properties, and habitual consumption has been linked to a lower risk of heart disease.


Frozen berries work beautifully here,  they're just as nutritious as fresh and typically more affordable.

Chia Seeds

The thickener that turns the berry mixture into a natural jam, no pectin, no sugar needed. One ounce of chia seeds delivers about 11g of fiber and is the richest known plant source of omega-3 fatty acids (ALA). 


Harvard T.H. Chan School of Public Health notes that chia seeds contain all nine essential amino acids and are a valuable source of calcium, magnesium, and antioxidants. The fiber in chia may also help slow digestion and support more stable blood sugar levels after eating.

Dark Chocolate (70%+ cacao)

Cacao is one of the most flavonoid-rich foods on the planet — a natural source of magnesium, iron, and antioxidants. 


Look for bars with minimal ingredients and no refined sugar. We used our Smooth Dark Chocolate, made with just organic cacao and organic dates. But any quality dark chocolate with 70%+ cacao works.

Shredded Coconut (optional)

A light finishing touch that adds texture and a subtle tropical note. Shredded coconut contains small amounts of medium-chain fatty acids (MCFAs), a type of fat that is more easily absorbed and converted to energy by the body compared to longer-chain fats. Keep it unsweetened for the cleanest ingredient list.

 

 

Why This Recipe Works


Most bars — the kind you'd make at home or buy in a store — get their sweetness from refined sugar. This one doesn't. The banana sweetens the base naturally, the berries bring their own brightness, and the chocolate on top adds richness without any added sugar layered in.

The chia seeds do something that's easy to overlook: they transform frozen berries into a thick, jammy filling using nothing but heat and time. No thickeners, no pectin, no sugar syrup. Just the seeds absorbing the liquid as the berries break down.

If you use a dark chocolate that's also made without refined sugar, the entire bar stays free from added sugar, start to finish. That's not a compromise. That's just real food, made right.
