Fresh raspberries stuffed with blueberries, coated in creamy yogurt, frozen solid, then dipped in dark chocolate and finished with a pinch of flaky sea salt. The result? Ingredients
- About 25 large, firm fresh raspberries
- About 25 fresh blueberries
- About 1 cup full-fat Greek yogurt
- A splash of milk of your choice, to thin the yogurt
- About 150g dark chocolate (70%+ cacao), roughly chopped
- Flaky sea salt, for topping

How to Make It
- Stuff each raspberry with one blueberry, nestling it gently into the hollow center. The blueberry should sit snug, that little pop of flavor is the whole point.
- In a small bowl, stir together the Greek yogurt and a splash of milk. Keep mixing until the texture is smooth and pourable. You want it thick enough to coat but thin enough to dip easily.
- Dip each stuffed raspberry into the yogurt mixture, coating it completely. Place on a parchment-lined tray. Freeze for 15–20 minutes, or until the yogurt is completely firm to the touch.
- While the berries freeze, set up your double boiler: fill a small saucepan with about an inch of water and bring it to a gentle simmer over medium-low heat. Place a heatproof bowl on top, making sure the bottom doesn't touch the water. Add the chopped dark chocolate and stir slowly and continuously as it melts. Once fully smooth, remove from heat. Tip: Keep the heat low and patient. Chocolate can seize if it gets too hot too fast.
- Working quickly, dip each frozen yogurt berry into the melted chocolate, coating fully. Return to the parchment-lined tray. Immediately sprinkle with flaky sea salt. Return to the freezer until the chocolate shell is fully hardened. Tip: Work in small batches. The frozen berries melt fast once out of the freezer. Keep the rest chilled while you dip.
- Serve straight from the freezer. Store leftovers in an airtight container in the freezer for up to one week.
